Tortillas and nostalgic noodles

Tortillas our way.

Poul loves Mexican food so we often make tortillas for dinner. We usually cheat a little and buy most of the things ready-made, but we always make the guacamole from scratch. Tortillas with ground beef makes an easy and fast dinner and if you don’t go bananas with the cheese and the sour cream, it’s also quite healthy food.

Though I doubt that a real Mexican will recognize my tortilla experiments as genuine Mexican food, since they have gradually taken on a very Danish appearance.

Otherwise, I’m packing again since I’m leaving for Copenhagen on Wednesday. I’ve bought Trine a present: Two Pot Noodles. When we were kids, we used to love Pot Noodles (we even chose Pot Noodles over candy), but suddenly, they were not sold in Denmark anymore. Here in Dubai you can get them everywhere, so when there’s room in my suitcase I usually bring a cup or two with me for Trine.

    Since my husband met me he is now a lover of guacamole, he had never tried avocado before but now loves it & we also cheat wen we make tortillas but guacamole is always freshly made in our household too :-) have a great time in Copenhagen.

      Yes, guacamole is such a dinner-saver. Though, the ready-made guacamole you can buy in the grocery store tastes really weird (like some kind of green cheese). One day, I’ll even try to make the tortillas myself, but I’ll take one step at a time… Thanks for your comment:)
